Unfinished Business

My New Years Resolution this year was to simplify my life. Have I succeeded? The juries still out. I think this is going to be an on going battle. On January 1st, I started with my “digital clutter” I deleted old emails and messages in my cellphone. The feeling I got when I pressed delete was invigorating. Today I have 434 emails in my inbox. Mostly junk. Why don’t I just delete them as I see them come through on my Blackberry?

I tend to keep things “just in case” I need them. Usually I don’t. I just can’t help it, I love “things.” Do I need these things? No.

Living a clutter-free life means fewer possessions means easier cleaning :) Which I am all for!!! It feels so good to have a clean uncluttered space. It’s amazing to me that I can meditate at my yoga studio, but at home? Forget about it. Why? Because my mind is constantly on what I can/need to do.

Minimalist. That is my new goal. I am going to try to at least 5 minutes a day to pick a random space and clear it, and keep it cleared!!

Baby steps. I’ll keep you posted ;)

It’s Halftime America.

We had a fantastic first Super Bowl with Eleanor. The focus was definitely on Eleanor and not on the big game!

She was our star attraction! I did catch a few of the commercials and was too impressed… The ones that stood out to me were the M&M’s one, Dorritos and Chrysler’s. Originally from Michigan (1hr. 30min. from Detroit) I was so proud to be a Michigander! In case you missed it..

Awesome right?! Gotta love Clint Eastwood.

Today has been filled with leftovers and naps :) I love lounging on cloudy cold days! I was in the mood for a sweet treat and so came these little gems…

Oatmeal Raisin Pecan Cookies

1 Cup Whole Wheat Pastry Flour (Or Unbleached All-Purpose)

2 Cups Oats

3/4 Cup Unsweetened Shredded Coconut

1 T. Cinnamon

3/4 Cup Maple Syrup

1/2 Cup Canola Oil

1 t. Vanilla Extract

1/2 Cup Raisins

1/2 Cup Chopped Nuts (I used pecans)

Preheat oven to 350 degrees. In a medium size bowl, combine flour, oats, coconut and cinnamon.  In another small bowl, mix together wet ingredients. Add wet to dry and then fold in raisins & nuts. Cook for 12-15 minutes. Makes 2 dozen delicious and nutritious cookies!

My husband was happy to see a fresh plate of cookies when he got home!! Yum!
